Vancouver's Award-Winning Culinary Champion
Born in Malaysia, raised in Vancouver, and trained in luxury kitchens across North America, Chef Alex started washing dishes and has become one of BC's most celebrated culinary figures. He won the Canadian Culinary Championships. He topped the charts at Gold Medal Plates — multiple times.
He represented Canada at the Bocuse d'Or — the closest thing cooking has to the Olympics — and finished in the top 10 globally. And in a moment that's now Canadian culinary legend, he became the first challenger to defeat an Iron Chef on Iron Chef Canada, beating Hugh Acheson in a 5-dish, 60-minute battle.
Today, you'll find him at the helm of Boulevard Kitchen & Oyster Bar in Vancouver or Wild Blue Restaurant + Bar in Whistler — or passing judgment on home cooks as a regular on Wall of Chefs. What drives him hasn't changed: great ingredients, classical technique, and a Pacific Northwest state of mind.
What does it take to cook like Canada's best? Better technique, yes. Better ingredients, absolutely. But also — and Chef Alex will be the first to say this — better equipment. That's exactly where our partnership comes to life. In this exclusive content series with Trail Appliances, Chef Alex Chen opens up his playbook: his cooking philosophy, the techniques he's honed over decades in professional kitchens, and the appliances he trusts to bring it all together.

Culinary Artisan Series - Elevating Comfort Food Classics
Comfort food is not a compromise; it is an invitation. In this series, Chef Alex Chen takes the dishes we love most and asks what they could become with the full weight of culinary craft behind them. From a French onion soup built on braised beef short ribs and Madeira wine, to a Japanese-inspired lobster corn dog, to a black truffle and Taleggio grilled cheese — each episode is a masterclass in sourcing, technique, and the art of cooking with complete intention.
